Zucchini Pizza Casserole

Zucchini pizza casserole is a delicious and easy dish that is faultless for a weeknight meal.

It is made with a base of shredded zucchini baked until tender, then topped with your favorite pizza toppings. This dish is a great way to use up any extra zucchini you have on hand, and it is also a healthy and satisfying alternative to traditional pizza.

Ingredients:

  • 4 cups shredded zucchini
  • 1/2 teaspoon salt
  • Two large eggs, beaten
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 1 (15-ounce) can tomato sauce
  • 1/2 cup chopped onion
  • One clove of garlic, minced
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes (optional)
  • Your pet pizza toppings (such as pepperoni, sausage, bourgeons, peppers, olives, etc.)

Instructions:

  1. Temperature the oven to 400 degrees F (200 degrees C). Grease a 9x13-inch baking dish.
  2. Place the torn zucchini in a colander and sprinkle with salt. Let it sit for 10 minutes, then drain and squeeze out excess moisture.
  3. S syndicate the zucchini, eggs, Parmesan cheese, and mozzarella cheese in a large bowl. Mix well.
  4. Press the zucchini mixture into the lowest of the prepared baking dish.
  5. In a medium pot, warmth the olive oil over average heat. Add the onion and cook until unstiffened, about five notes.
  6. Add the garlic, oregano, and red pepper shavings (if employing) and cook for 1 minute more.
  7. Stimulate in the tomato sauce and bring to a seethe. Let simmer for 5 minutes.
  8. Pour the tomato sauce over the zucchini crust.
  9. Top with your favorite pizza toppings.
  10. Bake for 20-25 minutes or until the cheese is molten and bubbly.

Tips:

  • For a vegetarian option, omit the meat and add in some extra vegetables, such as spinach or zucchini.
  • You can also use pre-shredded zucchini to save time.
  • If you don't have Parmesan cheese, you can substitute it with another type of hard cheese, such as cheddar or Gruyere.
  • To make this dish ahead of time, assemble it and then store it in the refrigerator for up to 24 hours before baking.
  • The remains can be stored in the refrigerator for up to 3 days.

Variations:

  • White Pizza: For a white pizza, omit the tomato sauce and use ricotta cheese instead of mozzarella cheese. Top with your favorite toppings, such as grilled chicken, sausage, spinach, or artichoke hearts.
  • BBQ Chicken Pizza: To make a BBQ chicken pizza, use BBQ sauce instead of tomato paste. Top with grilled chicken, shredded mozzarella cheese, and red onion.
  • Breakfast Pizza: For a breakfast pizza, use eggs, sausage, bacon, and cheddar cheese as your toppings.
